deconstructing the cappuccino

last friday, in the midst of all the london design festival chaos (and the hot-footing it from one side of the capital to the other and back again), i was lucky enough to be invited to attend a rather special and unusual food experience hosted by marcel wanders at the pop-up galleria illy.

to celebrate the uk launch of marcel wanders’ baby can can and crysalis lights for italian brand flos, there was a specially concocted menu of coffee-inspired treats which certainly tantalised the taste buds and had me jittering on caffeine all afternoon long!

the edible coffee grounds were actually coffee cake crumbs masquerading as such, served from a coffee filter ‘bowl’ and accompanied by a pouring cream, disguised within refilled uht pots. there were also nitrous-aerated coffee microwave brioches, pain au chocolat ‘affogato’ made using liquid nitrogen and a deconstructed cappuccino, reworking all the traditional elements to include a white coffee mousse, caramelised milk foam and liquid nitrogen chocolate powder.

the imaginative menu was created by concept culinary caterers blanch & shock, and certainly provided a stunning accompaniment to the vast collection of illy espresso cups on show, designed by some of the most influential contributors to art, film and music of our generation.

over the next few weeks illy baristas from the università del caffè will provide free courses to help people master the art of coffe preparation, while serving up a world class selection of coffes including the new iced offering, illycrema, which i will definitely be heading back for as it was delicious!

    The food sounds very interesting, some weird concoctions going on! White coffee mousse sounds good.
