wake up... banana fritters

what // donkeyo kajoo (banana fritters), served with papaya, mango & passionfruit yoghurt

why // a little taste of the maldives for a sunny weekend morning. i adapted a recipe from one of my favourite asian fusion cookbooks; the six senses. all you need are a couple of small bananas which you mash using a fork, then add 2 teaspoons of castor sugar, 1/4 tsp of baking powder, 2 tablespoons of flour and a dash of vanilla essence. divide the mixture into thirds, then shallow fry using ground nut oil for a couple of minutes on either side until golden ~ voilà!
