i have a confession: i’m addicted to peanut butter (surely i’m not the only one?!)
so, when i recently decided to go dairy-free the decision was made all the easier by the knowledge that peanut butter was most definitely not something i would have to give up!
these peanut butter cookies are from a recipe i found a while ago over on goodness green, and are super quick & easy to make and yummy to boot. i whipped up a batch the last time my bestie came round for a cuppa & a gossip and they were demolished in one sitting. in fairness, the recipe only yields 8-10 cookies so it wasn’t all that bad, but i reckon we’d have done the same even if i’d doubled the measures…
ingredients:
1/2 cup coconut flour
pinch of salt
dash of cinnamon
1/4 tsp baking soda
1/4 cup natural peanut butter
2 tbsp agave nectar
2 tbsp almond milk
1 egg beaten
recipe:
preheat your oven to 180ºc
combine the coconut flour, salt, baking soda & stevia in a small mixing bowl.
in a separate bowl whisk the peanut butter, agave nectar, almond milk & egg. add to the dry mixture & combine to form a dough – you can always add a touch more milk if necessary.
roll the mixture into 10 small balls and place on a lightly greased baking tray. push each dough ball down gently with the back of a fork.
bake for 8-10 minutes.
remove & allow to cool slightly before enjoying with a big ol’ steaming cup o’ joe!
